Ryan Hamilton's Alfajores... Excellente!

Ryan surprised my husband with a batch of his favorite cookies, Alfajores, the National Cookie of Peru. Having never made them before, but a master of American Caramel, he adapted a recipe he found in one of my Peruvian cookbooks. Actually, he only used the ingredient list and completely changed the recipe adding new ingredients and changing the portions of the base, crafting the softest flaky cookie, which is the secret to a perfect Alfajores.

Starting with his own recipe for caramel he incorporated the traditional marjarblanco made from condensed milk and created what has to be the best Alfajores I have ever tasted.

Tadaaaaaa! Mui Rico!

With the left over caramel mixture he added a small bottle of my chocolate Pisco.

He then poured the adapted marjarblanco into individual serving bowls to be eaten straight up. Not for the faint of heart.

Ryan's Recipe

The Cookie

1 cup butter

2 1/4 cup flour

12 tbls of bakers sugar

Soften butter by beating with a mixer and then add sugar and blend until fully incorporated. Add flour a little at a time and blend. Finish by kneading by hand 6 or 7 times and then roll out on a flowered surface. cut2 1/2 inch diameters and place on cookie sheet. Bake 350 for 10 min or until bottoms light golden color. Do not burn or brown.

The Marjarblanco Adaption

This recipe was actually improvised as he went so I attempted to quantify here for reproduction.

First boil a sealed can of condensed milk in a pot on the stove submerged inn water for one hour. Then allow can to cool before opening. Next place 2cups sugar and enough water to just cover. It is critical to use a brush with water to wipe down any sugar granules from the sides of the pot before beginning the cooking on the stove top. One crystal can seize up the batch and render it unusable. Add 2 glugs (tsps) of corn syrup and begin cooking on medium heat. Stir constantly until a consistency of maple sugar. Continue to cook until the caramel is a golden brown and sticks to the spoon. Remove from heat and whip in 1/4 of the can of cooked condensed milk, tsp molasses and 2 tbls of vanilla. Whip until a creamy blend that sticks to the spoon.

Lay a cookie face down and place one heaping tbls of marjarblanco in the center. Sandwich with an additional cookie on top. Repeat until all cookies are paired up. The final step is to cover in powered sugar. Prepare yourself for the perfect blend of Peru and America in a tiny blast of pastry heaven!

A Little Stumble, A Big Fall, and Life Changes.

As a budding Gerontologist, I often think about what my contribution to the body of knowledge in my field can be, especially because I am beginning my thesis. Rolling up my sleeves, and excited to jump in I started the process with a stack of books and some great ideas. Click on the computer, sharpen some pencils, and the phone rings. No big deal, I think and pick it up. On the other side is the shaky voice of my sister trying to explain that her and my mother both fell and that she is at the hospital. They were out doing errands and my 91 year old mom got weak and said she was going to faint. My sister bracing to support her, instead went down with her taking out a display rack along the way. With the quick emergency response, both were whisked away to be attended in the emergency room. My sister, with a hard conk on the head was released and my mother spent the next week in and out of dementia episodes, blood pressure ups and downs, which is what caused the fall, and generally looking like a tiny little doll in the bed whom someone had used as a punching bag.

This is what is called a "Traumatic" response need within the realm of my newly minted Aging-in-Place certification. Traumatic, because there is no time to plan, research or catch your breath. Therefore decisions are often made in a vacuum, very expensive, and valuable services missed. Thank God for the Social Service Assistants at the Rehab center, but at the end of the day, it is up to family to figure out the best options and put them in place. In my case I have amazing siblings that role up their sleeves and have high standards, so both my mom and sister can rest easy.

At the end of the day both of my special people will be fine, but life has a new parameter and needs that require specific interventions to go forward. My time will be invested, with my family's help and we will figure this out. The calendar is cleared and phone calls, meetings, and assessments are scheduled. But there sits my stack of books on aging and business, beckoning me to write a brilliant thesis. Now I just stare at the stack. Something is missing and I think I know what it is... I seemed to have left the heart and spirit of aging in my pursuit for the academic process. Seeing all the elders suffering, or perhaps scared and lonely in this rehab facility reminded me that the systems I will create as a business gerontologist have a very real face. I must choose wisely my focus, and leave no stone unturned in my pursuit for innovation. There are better ways, there are gifts in this journey, and there are ways to make aging less scary and isolating. Of this I am sure. And in honor of this tumultuous week, I will turn the kaleidoscope and discover a new path into my thesis. I will find the path with heart.

My Summer Read Turns Into A Summer Helping Hand!

My fellow Make and Take Gal, Poh, gave me a lovely book by Cami Walker called 29 Gifts. This little gem explores the trials of Cami's adaption to having MS. Along her journey Cami meets a Spiritual Director who provides her with life changing insights on the power of giving. Cami embraces the suggestion and we journey with her as life takes on balance, mindfulness, and joy! The abundance focus changes everything! There is a whole month of summer left, I suggest this read as a wonderful catalyst to send us into to fall and the giving season.

Poh is practicing what she is reading as well. This past month my community lost a very special young man to suicide. His parents asked me to make a quilt from his t-shirts, an honor that still leaves me breathless. When the box arrived I simply could not open it. It was Poh who came over and sat next to me, and then grabbed the scissors and pushed me to begin the task of preparing the blocks before I had time to think. Knowing I could not do this alone, she camped out in my home for 3 1/2 straight days until we finished the quilt and passed it on to be sewn together by a long-arm quilter. Poh was my angel for this project and asked for nothing in return. The ripples will extend far beyond the 3 days of time Poh gave me, and Cami's book has been a wonderful inspiration to share in this practice of abundance and mindfulness! Rabbit-Proof Fence and Warm Springs People Share a Common Hardship

We spent a fun evening last night at the local park having a picnic with friends and their two kids. I just love the long sunny evenings of summer in Portland. Afterward we decided to snuggle up with Netflix and chose Rabbit-Proof Fence which is a true story... wow! Such a heartbreaking story of colonialism and the effects on the halfbreed children of Australia. As I watched the film unfold, the wrenching story of three children being ripped from their mother and village to be put in a camp where they are taught to "be" English, gives way to the uncomprimising spirit of one human soul in the eldest girl.

I had seen this very spirit before. A few years ago I had the privilege to be the interviewer of a native woman on Warm Springs Reservation whom also suffered at the hands of colonialism. Agnelo Gomes, producer of the documentary, The People of Warm Springs, asked me to come along to crew and interview for the film he was creating to commemorate Oregon's 150th Anniversary from the Native perspective. At a turning point for me in our 4 day shooting schedule, I sat with a tribal elder, Arlita Rohan, who was/is responsible for implementing the language programs for the disappearing native languages of the tribes. As the interview settled in to a rhythm, Arlita shared her story of how the language was initially put in danger through the U.S. policy of assimilating the natives, another way of saying beating the Indian traits out of them. Our conversation led into the recent time of the 1950s when the American government took the young children from the reservation and put them in English speaking boarding schools; camps.

As she recounted the trauma of this experience she explained that they were taken from their families and not allowed to return for many years. At the boarding school she was punished if she spoke her language, but what was worst for her, what defied any compassion, was when the school mistress took her moccasin shoes from her. The tears escaped their well guarded prison at this point and she was in the camp once again...

The goal of these camps was to remove all aspects of native ritual, language, and life so that they would eventually blend into the white mans new culture. The fear of what is different, of what is unknown, has swept across our country time and time again. Each time the segregation seems to be the tool of destruction. The slaves, the Japanese internment camps, even the current day charming ethnic villages of NYC are remnants of a time past where you simply did not mix with "those" people. The damage that has been done to the native communities in America and Australia are still ripe with fallout of these misguided efforts.

As with so many horrific events in history, we must remember and teach our children these stories so that they do not happen again. The story of The Rabbit Proof Fence and also The Warm Springs People are modern stories, and I am sure just two of many similar stories in our modern history. Watch them with your children and talk about what they see and feel. Visit Warm Springs and meet the vibrant and thriving nation in our own back yard. Learn about your own neighborhood and community to see what stories lie just beneath the humm. The profound spirit of these two women on separate continents speaks to the will of the human spirit to be seen, validated, and respected. I am asking myself, who needs to be seen in my life today?

Travel Log, Lima ~ On a Wing and a Prayer!

Our last day in Lima and we all stayed in bed. No good byes, no last minute alfajores, no walks on the sea wall. We all managed to get yucky strep throat and have spent 3 days thrashing about the apartment. Ryan was well enough to leave on his jungle trip, well stocked with a pharmasutical arsenal. Last we heard he arrived and was going to go parana fishing... oh that should be good! The rest of us are gathering our belongings to head off to the airport.

We have enjoyed seeing everyone and our travels to the highlands. It will be great to get home and feel better however. I am hopeful that summer, sun, and heat have finally arrived in Portland?? Oh please! Until then, ya nos venos!

After the surprise arrival of my daughter Wednesday, Ryan and I tucked her in bed to tackle the hard transition with the altitude while we headed out to the Pisac Ruins. An Incan sun temple overlooking the Urubamba and Sacred Valley. While we were there a beautiful thunderstorm floated across the mountain tops offering some cool views of squals and shadows on the giant peaks. Ryan was able to hike around the peak while I investigated the closer dwellings and terraces. I had not been to this site before, so it was special for both of us. The altitude was quite high causing me to be a bit winded doing normal hiking. We returned back to Lizzy Wasi and settled in for the night to prepare for our very early train ride to Machu Pichu in the morning.

Thursday morning we rolled out of bed at 430am and headed out to Ollotytambo to catch our train down the valley canyon into the jungle. The train hugged the Urubamaba river, the only way in and out of the canyon other than the Inka Trail. As it chugged along the windows in the ceiling of the train gave breath taking vistsa of Mt. Victoria and the other snow capped mountains and glacier. It is easy to feel very small in this train as massive boulders and mountains hang percariously over our heads. We arrived at Aguas Calientes and managed the small walk to the buses that would scoot us up the mountainside of switch backs to our final destination, the only part of this trip I wish to skip each time. The switchbacks are dramatically steep and scary as the drivers race up and down the mountain, fishtailing at each turn.

Arring at the park my daughter is moving slow with great intention to not trigger her tacky cardia. Having tried to make this trip many times over the years, we finally figured out her personal formula for dealing with her altitude challenges. Making it this far was a lifetime goal achieved for her. We entered the gate and were told that we should have bought our tickets down below in Aguas Calientes... what is with this trip and tickets!!!! The security guard took pity on us and snuck us into the ticket office where they take silly foreigners who don't know what they are doing, and we emerged 15mins later with smiles and determination to get on our way... boy, could COPA airlines take a lesson on customer service from these folks.

So there we were, taking one step at a time as Alex took OxyShots and ascended at a snails pace. At one point when it was clear she may passout, Ryan hoisted her onto his back and carried her up the mountain. Reaching the small summit, we all stood in awe as Wyna Pichu emerged in full grandeur in front of us. Alex had made it and there were no words for the expressions of these first time Machu Pichu travelers. We planted ourselves on a small outcropping to have water and a snack while marveling at the expansive ruins unfolding before us. After the required photoshoot, Ryan left Alex to me as he scaled the ruins to the Sun Gate, where the Inka Trail head emerges into the ruins. The views from this spot are the most spectacular. Alex and I found some llamas to play with and had a ball. We met an American family that we enjoyed a long visit with and then simply absorbed the beauty around us as the clouds moved in and out of the peaks. As we left the park, we stamped our passports with the 100 year discovery birthday celebration stamp made special for this week. A very special day! Seveal hours later we all settled into our seats on the return train to Lizzy Wasi.

We left the Sacred Valley early Friday morning and said goodbye to our dear friend Liz. She made our stay magical and her B&B was our home away from home. Arriving in Lima a took a bit to get our sea level legs back under us. However, the social calendar would not wait so off to see the premier of Harry Potter and dinner with the family afterward. We collapsed into bed and now have a full day ahead of visits and my mother inlaw's 80th birthday party! Let the celebrations begin!

Travel Log Day 7, Urubamba... The Sacred Valley!

I awoke this morning in The Sacred Valley, one of my favorite places on the planet. The air is thin and crisp with bright blue skies. Ryan and I set out from Lima on our own yesterday. We managed thru the airport and fell asleep at the gate lounge... almost missing our flight. The airplane ride was only an hour and before long we were buzzing along with our driver through Cuzco. It has grown so much since my last journey.

As we travelled out of the city the spectacular snow capped Andes appeared in front of us with the rich auburn tones of the countryside as a foreground. Neat trangle shapped piles of wheat are stacked row after row. We make several stops along the way to say hello to locals and grab some shots. I am in heaven as Ryan likes photography as much as me.

We arrive at Lizzy Wasi, our B&B which we will call home until Friday. My dear friend Lizzy greets us with all the comforts of home. Darling rooms and delicious beds with the yummy breads and cheeses of the local farmers. I may not leave! After a delicious lunch that Liz made for us we headed out to the salt flats and Muray for a tour. Passing through villages and fields along the way wishing my lungs would hurry up and acclimate to the altitude so we can begin walking everywhere.

The salt flats were amazing. We climbed around them like llamas and when sated by the stunning views and uniqueness of the place we pulled up a chair and each indulged in our own version of bliss :)

Once we got back to Lizzy Wasi we met the other guests staying here and all of us walked into town for pizza. Is it the best pizza in the world or just the air and activity that made it seem so? We stollrd home in the dark as moto taxis wizzed by, dogs darted about, and small children squeeled from door ways at the foreigners. It was beautiful to walk and see the billion unobscured stars in the sky with an almost full moon.

Today I awoke to my daughters voice saying she was on her way. After some apprehension she decided to join us and make yet another attempt at going to Machu Picchu. Poor kid gets horrible tacky cardia in altitude with all the miserable side effects. The great news is they now have canned oxyshots that alive some of these symptoms. Once again I made the hour drive back to Cuzco airport, picked her up and drove right back. We arrived at 10 just in time to surprise her boyfriend Ryan, who did not know she was coming. She is resting after a small breakfast and hoping to feel better a bit latter.

Ryan and I are heading to Pisac Ruins and the Market. Wednesday is the big day in the valley to exchange and barter animals and food. Until later...

Travel Log Lima, Day 5 ~ Latin America Cup!

The last two days have been a blur of long walks and talks on the sea wall with my best buddy here and tons of food and family. I love my Italian family, because they enjoy every minute together. My niece and her fianace have started a new business last year making pasta for commercial distribution. They have invented several amazing unique recipes. Tonight before the big soccer game we enjoyed Aji de Gallina Lasagna. I could not imagine this combination and now I am ruined for eating normal Aji de Gallina because it is amazzzzzing! Yum! If they keep this creative edge up they will set a new standard and be very sucessful!

Asunta also made her delicious white onion soup which she has promised to pass on the recipe, so stay tuned!

I am off to bed for an early 5am wakeup call to head off to Machu Pichu!

A Giant Alfajores for our family tea!

Seems the connection will only allow me to upload a couple photos per day. Here is dessert from our family gathering on THursday. Alfajores are a soft butter cookie with Marjo Blanco (also known as dulce de leche) in the middle and then covered with powdered sugar. This is, umhmmmm, WAS, a multi-layered giant one!

Today was full of food and family once again :) It takes a bit to get our social legs on when we are here with the structured shared meals and hopping around the city. Tonight we went to the club for Chifa with family. They have made so many great changes to the builds there. Afterward we went with my daughter and her guy roaming the streets of Baranco... the Bohemian District, way cool. J and I saw areas we had not been to before. Then we went for cocktails at Ayahuasca, a new club that is in an old mansion house and each room is filled with amazing art work. What a fun place full of an eclectic mix of people from all over the world and every age. We had a ball, and no we did not partake in "that" kind of Ayahuasca :)

Peru Travel Log Day Two ~ Lima

We spent the day visiting family and friends, eating at a favorite spot for lunch and spent the evening chilln with parents watching soccer.

Peru Travel Log ~ Day 1

Arrived in Lima last night at 1:30am. It was raining, something I personally have only seen twice in my 30 years of coming here. Lima is my second home where my husband's family lives and many dear friends. It has been 2 long years since I have travelled down this way and I am excited to see everyone.

When I arrived at our apartment, my daughter had several close friends in to meet her boyfriend and catch up on each other's lives. She had arrived 2 days earlier staying with her aunt until today. She spent 2-days house hopping and introducing her boyfriend to family and friends; eating her favorite Peruvian foods; and reconnecting with her home culture by renting her first car here. A very brave act if you have ever tried driving here.

My husband was on a seperate flight landing several hours later than mine, so I settled in and unpacked. The kids and I stayed up until 3 making plans and catching up. By the time J got in and settled in it was 4:30am. 8am came early as we all scrambled to get ready and head to the airport to drop the kids off for a 3 day trip to Moncora. The rest of the day J and I caught up with family and had a delicious lunch at the club and then walked the sea wall. My favorite activity when I am in Lima. Dolphins, pelicans, crabs, sea birds, and the village fishermen all engaged with their fishing activities. The fisherman followed the dolphins while the birds all swarmed above them each knowing this is where the best fish would be found. Sometimes I am lucky enough to see a dolphin toss a fish up to a pelican as a gift... Iv'e seen it a couple times!

Tonight we joined in the weekly afternoon tea with the family and caught up on all the news eating our favorite empanadas and sandwhiches. My great niece is now 2 years old and full of delightful squeels and antics which kept us all in stiches. Fat and happy we headed home to sleep... well almost, once the emails are cleared and school is caught up online. I will be adding pictures tomorrow.

It is great to be home!

An Evening with Master Chocolatier Julian Rose from Moonstruck

Last evening I had the honor of being part of an intimate gathering at the World Affairs Council event in Portland, Oregon where Master Chocolatier Julian Rose of local Moonstruck Chocolate gave us a lesson on the process for chocolate from the harvest at the farms near the equator to the table in one of Moonstruck's 5 local cafes. Learning the journey from the correct growing conditions to the science behind mastering the 3rd highest traded commodity in the world! Julian Rose delivered an engaging and informative course with a sprinkling of stories and chocolate politics. He demystified this historically amazing fruit.

As the science gets closer to proving that cacao originated in Central America, Julian Rose detailed for us his crowning accomplishment this past year in rediscovering the believed to be extinct Nacionale cacao tree. Over 100 years ago this crop was wiped out by fungi disease in Equador. Last summer Julian Rose, through a happy accident, bought some interesting beans from a farmer in a remote wild forest in a valley of Peru. Finding the flavor to be good he questioned some of the basic structures of the cacao pod that he had not seen before. The farmer, Fortunato, also found the pods odd with the expected "purple" beans, but also some white beans in each pod. After examining and having the documenting of the Gnome, it was discovered that the bean was from the Nacional line and that the mother tree was actually part of this small wild crop. This news was monumental for the global chocolate industry and for proving that Peru has the actual origin Nacionale, not Ecuador. For Julian Rose it was a rare discovery and professional accomplishment to his already recognized talents as one of the top 10 Master Chocolatiers in the world.

The good news for us Oregonians is Julian Rose bought the beans and formulated two versions of single source chocolate for the Moonstruck label. Named after the farmer and the number of tests to confirm its origin, Fortunato No.4 is available in a 68% bar or the sophisticated Dark Chocolate Tumbled Cacao Beans. Our tasting of the single source Moonstruck chocolates was amazing. I may be awake all night, but the smooth and fruity tumbled bean was OH so worth it! Promising to tease our senses even further, Julian Rose is creating a drinking chocolate from Fortunato No.4 in time for Fall 2011!

State Of The Ocean: 'Shocking' Report Warns Of Mass Extinction From Current Rate Of Marine Distress Reported in Huffington Post Today

If the current actions contributing to a multifaceted degradation of the world's oceans aren't curbed, a mass extinction unlike anything human history has ever seen is coming, an expert panel of scientists warns in an alarming new report.
The preliminary report from the International Programme on the State of the Ocean (IPSO) is the result of the first-ever interdisciplinary international workshop examining the combined impact of all of the stressors currently affecting the oceans, including pollution, warming, acidification, overfishing and hypoxia.
“The findings are shocking," Dr. Alex Rogers, IPSO's scientific director, said in a statement released by the group. "This is a very serious situation demanding unequivocal action at every level. We are looking at consequences for humankind that will impact in our lifetime, and worse, our children's and generations beyond that."
The scientific panel concluded that degeneration in the oceans is happening much faster than has been predicted, and that the combination of factors currently distressing the marine environment is contributing to the precise conditions that have been associated with all major extinctions in the Earth's history.
According to the report, three major factors have been present in the handful of mass extinctions that have occurred in the past: an increase of both hypoxia (low oxygen) and anoxia (lack of oxygen that creates "dead zones") in the oceans, warming and acidification. The panel warns that the combination of these factors will inevitably cause a mass marine extinction if swift action isn't taken to improve conditions.
The report is the latest of several published in recent months examining the dire conditions of the oceans. A recent World Resources Institute report suggests that all coral reefs could be gone by 2050 if no action is taken to protect them, while a study published earlier this year in BioScience declares oysters as "functionally extinct", their populations decimated by over-harvesting and disease. Just last week scientists forecasted that this year's Gulf "dead zone" will be the largest in history due to increased runoff from the Mississippi River dragging in high levels of nitrates and phosphates from fertilizers.
A recent study in the journal Nature, meanwhile, suggests that not only will the next mass extinction be man-made, but that it could already be underway. Unless humans make significant changes to their behavior, that is.

The IPSO report calls for such changes, recommending actions in key areas: immediate reduction of CO2 emissions, coordinated efforts to restore marine ecosystems, and universal implementation of the precautionary principle so "activities proceed only if they are shown not to harm the ocean singly or in combination with other activities." The panel also calls for the UN to swiftly introduce an "effective governance of the High Seas."
"The challenges for the future of the ocean are vast, but unlike previous generations we know what now needs to happen," Dan Laffoley of the International Union for Conservation of Nature and Natural Resources (IUCN) and co-author of the report said in a press release for the new report. "The time to protect the blue heart of our planet is now, today and urgent."

The Effects of Labyrinth Walking

When a friend invited Jo Ann Stevenson to walk a labyrinth, she had no idea it would have such an impact on her life. As she followed the circular path, her thoughts turned to her recent cancer diagnosis.
“I was aware of the curves and that breast cancer seemed to me a curve that had been thrown into my life, so I had the feeling that I was walking on my life path,” says Stevenson.
That first experience was in 1994. Stevenson has gone on to become president of Ontario’s Labyrinth Community Network. She also conducts labyrinth workshops, at Toronto’s Women’s College Hospital, for people in all phases of cancer—from those newly diagnosed to those in long-term recovery.
Calming movement
Possibility, peace, compassion, fulfillment: those are words people use to describe their feelings after they’ve walked a labyrinth. The ancient meditative practice is gaining popularity in modern times and is being applied in health care settings to promote well-being.
Unlike mazes, which are designed to confuse users, labyrinths consist of a single path that winds its way from the outside of the circle to the centre and back out again. Not only are they being used to complement traditional cancer treatment, but they are also a supportive measure for family members and caregivers.
Meditation is often recommended for those diagnosed with cancer to help reduce stress, to gain perspective, and to work through emotions. Stevenson believes walking a labyrinth is helpful for those who have trouble with conventional meditation. “Your body is moving, so you’re controlling your mind a little bit, just with the process of walking,” she says.
Following the circle’s gentle twists and turns engages the body, and walkers often describe a feeling of being rocked and soothed. As they progress along the path toward the centre, walkers’ thoughts turn inward. Stevenson says this connectedness to the inner self persists long after leaving the labyrinth.
Some users report profound experiences: connecting with their spirituality or experiencing extreme peace. Others report less dramatic effects such as feeling of release of centredness. Public health nurse Diana Ng, known in Surrey, BC, as the Labyrinth Lady, reminds clients to forgo expectations. “Experience the experience for itself. Just walk it. Enjoy it.”
Ng also suggests those with cancer may benefit from a labyrinth walking group. Even though walking the labyrinth is a solitary activity, Ng believes that a group can provide support and prevent feelings of isolation.
Physical effects
Not only does labyrinth walking foster peace and calmness, but it also adds the benefits of physical activity. Low- to moderate-intensity walking has been found to increase muscle strength, lower blood pressure, and improve mental function.
Because labyrinth walking has only recently been used in a health care context, there are relatively few scientific studies on the subject. A 2006 study published in the Journal of Holistic Nursing concluded more study was needed into the exact physical effects of the activity. It noted, however, that the majority of cancer patients in the study continued to walk the labyrinth after the study was over—an indication that they found some benefit.
Walking a labyrinth

Before starting, take several slow deep breaths to clear your mind.
Step into the labyrinth. Follow the path at a comfortable pace, allowing your body to find its own rhythm. Keep your mind clear and in the moment. If this is difficult, try repeating a poem, a prayer, or reflect on a dream or image. This stage is called releasing, or journeying in.
When you reach the centre you are in the receiving stage. Focus your thoughts on healing, renewal, and wholeness. Sit or stand until you feel the inclination to move on.
Once you choose to leave the centre you begin the returning phase, a gradual return to the everyday world. Reflect on your journey through the labyrinth.
If you are part of a group, you may want to have a debriefing session afterward to discuss how people felt during the walk, or you may want to take a few minutes to journal about the experience.

Those without access to a life-sized labyrinth can use a small hand-held replica and follow the pattern with a finger of their non-dominant hand. These are useful for guided meditation during chemotherapy, or prior to radiation or surgery.
Whether in an outdoor space or at the bedside, the journey through the labyrinth is a metaphor for the journey through life. And just like life, it’s an experience unique to each person.

Labyrinths at the end of life
In 2006 Crossroads Hospice, in partnership with the city of Port Moody, BC, completed construction of a labyrinth in the city’s Pioneer Memorial Park. Surrounded by native plants, its path is laid out in stone pavers and is wide enough to accommodate wheelchairs. An arbour marks the entry and along the way are stones inscribed with inspirational words. Benches allow walkers to pause for a rest.
The Crossroads Hospice labyrinth is used by patients, caregivers, and hospice staff as a tool for meditation and wellness. It is also the focal point for a bereavement walking group that meets weekly and starts each of its outings with a meditative walk through the labyrinth. Patients too ill to venture outside use finger labyrinths, handmade by a local craftsman.

April 2011 Make and Take Round 2, Wine Jelly!

We managed an extra Make and Take this month and produced some amazing white and cabernet wine jelly, blackberry, and marionberry jam. Pam hosted our gathering and had a few cute packaging ideas up her sleeve!

We started by making the wine jelly...

and we finished with a lovely lunch and lemon dessert! Thank you Pam!

Wine Jelly Recipe

adapted from Allrecipes.com

3 1/2 cups of your favorite drinking wine

1/2 cup fresh squeezed lemon juice

1 (2oz) package of Surejell dry pectin

4 1/2 cups white sugar

Combine first three ingredients into a large sauce pan. Bring to a boil, stirring frequently. Add sugar, stirring until dissolved. Return to rolling boil. Boil hard for 1 min., stirring constantly. Remove from heat. Skim foam off top, if necessary.

Ladle hot jelly into hot, sterilized jars, leaving 1/2 inch head space. Tighten 2 piece lids. Process for 5 minutes covered in boiling water bath.

Serving suggestions:

The Make and Take gals like these jellies served over cream cheese with nuts sprinkled over top, or a top any hard cheese; as a meat marinade; ice cream or yogurt topping; on toast or scones; and when no one is looking...on a spoon inserted in mouth! Enjoy!

Slipping off to the ASA conference in San Francisco was a rare treat with a few golden nuggets to share with you. Aging in America and in the world at large is becoming hot topic conversation in the most unlikely places, but at the ASA gathering it is all about innovation, technology, spiritual connection, boomer careers, and for many savvy entrepreneurs who are mission driven it has become a boiling pot for creating quality care and services for parents and loved ones. Presentation after presentation in the 2 short days I was able to attend, the personal stories of authors, CEOs, and gerodemographers unfolded their motivation for jumping ship in the more traditional arenas of business and taking up a personal challenge and mission to make aging in America a more mindful and purpose filled experience where elders are not put out to pasture or left in a nursing home to stare out a window. New career strategies for the boomers and spiritual practices designed to reawaken Americans to the sacredness of death were the bookends to the dynamic speakers cover the emerging ideas and therapies to keep our oldest of the old engaged and surrounded in vital care and compassion.

Now before you think I drank some ASA koolaid or write promotional ads for them, I did find my peek into this conference a bit hectic logistically and having a long way to go to measure up to the design of the high-tech conferences I am use to attending. But as a newly minted Business Gerontologist I went to the conference with no expectations and with an eye on what trends were emerging from the collected energy present.In this aspect I was not disappointed. From the co-attendees in the seat there was a trend of professionals retooling to enter into this growing professional segment. There were many budding authors and transition coaches...hmmm what is that about? But for the most part, like the presenters, most people I talked to arrived in this area of business by way of a personal story with a loved one or a "calling" to serve.

At the end of Tuesday our opening General Session featured Nancy Pelosi followed by humorist Mary Maxwell who truly had us all roaring in our seats. Kathy Greenlee, the under secretary on aging, was dazzling in her presentation and gave us the pulse of policy and what is going on in Washington, D.C.

On the breakout lectern I found wonderful inspiration from Ken Dychtwald, who I believe could market demographic aging trends as a thriller novel. It would be one way to grab people's attention if they have not already noticed the Agewave breaking on the shore of the U.S. He unfolded his 7 course corrections for a New Vision for 21st-century Aging. I completely enjoyed his standing room only presentation with insights on future trending and his perspectives on impacting positive outcomes. Another stand out presentation for me was Stephen Reily and Carol Osborn's The Pulse of the Vibrant Boomer Woman. Here was the hardcore data of marketing to the boomer woman segment. Enlightening and presented by mission driven individuals, I found many of my own perceptions confirmed by the hard data and discovered some new and emerging trends, such as women now make up over 53% of the work environment, imagine what this could mean; boomer men are feeling unsteady and discovering their own midlife transitions are not their fathers; and the X and Y generations have a lot to share with us.

My final hours of the conference were spent with Gail Sheehy at the Grace Cathedral Labyrinth. Ms. Sheehy has shared her insights and writings through her Passages books over the years as a guidepost for woman's transitions. In her latest book, Passages in Caregiving, she continues her graceful sharing of the struggles and gifts learned over 9 years of caring for her husband before his passing. Chris and I were honored to help host her walk with the ASA attendees as the sun poked through the SF fog and provided a soulful and inspiring experience on the labyrinth.

The conference continues until Saturday and I can only imagine the valuable ideas and conversations emerging from this dedicated mass of adventurers. Until next year... onward!
